Potatoes are my FAVORITE! All. Of. Them. In any form! So, I've tried ALOT of potato soups over the years and this one I put together from several different recipes is true comfort food and absolutely delish!
Start to finish in ONE pan.
3-4 Celery stalks diced
1 small Sweet Onion diced
3-4 Green Onions (including greens) diced
2.5-3lbs Russet Potatoes (6-7 Medium) cubed
1 tea Season Salt
1 tea White Pepper
1 tea Black Pepper
2 tea Fresh Garlic
2 Cup Shredded Cheddar
1 Quart Heavy Whipping Cream
3 Cups Chicken Broth
All in one pot/pan:
-Fry bacon until really done (super crispy) but not burnt
-Add in onions, celery, salt, peppers, garlic
- Cook veggies until onion/celery softening
-Add in potatoes, stir them around to coat
-Add in chicken broth
-Bring to a boil and cook until potatoes start to get soft
-Add in cream, stirring continuously
-Continue to cook until potatoes are done/soft
-Stir in cheddar & continue stirring until cheese is melted
(If you like a thicker soup - remove 2 cups of the completed soup and smash up all the potatoes to release the starch, and this back into your soup and stir (an immersion blender works awesome)
This is truly sssooo good and perfect for a cold winter day!
